Chicken Curry

Serves 2

Ingredients:

2 cups baby spinach
2 boneless skinless chicken breasts
1/2 cup Cashew Curry Sauce
1/4 cup chopped cashews
1/2 sliced banana
2 Tbsp Port Fruit Chutney

Preparations:

Place chicken on top of spinach, spoon over Cashew Curry Sauce. Cover with foil and bake at 375° for 25 minutes. Top with cashews and bananas. Serve with Port Fruit Chutney.
