Grilled Cobia Mediterranean

Ingredients

3 lbs Cobia

1/3 cup olive oil

1/3 cup lemon juice

1 clove garlic (minced)

1 tsp salt

¼ tsp pepper

1 jar Sable & Rosenfeld Mediterranean Bruschetta

Preparation

Cut fillets into serving size pieces, and place in a bowl. Combine olive oil and lemon juice. Add all remaining spices to oil and lemon juice, and mix. Pour mixture over fish steaks. Marinate for 5 - 10 minutes. 

Remove from marinade and grill for about 6 minutes over coals, basting several times with marinade.  Turn and grill an additional 4 - 6 minutes or until fish is opaque and separates easily. 

To serve:

Top each fillet with warmed Mediterranean Bruschetta and serve additional bruschetta on the side.
