Orzo Salad with Bruschetta & Feta

Ingredients

1¼ cups orzo pasta

⅓ cup feta cheese, cubed

½ cup Sable & Rosenfeld Mediterranean Olive Bruschetta -or- Spicy Olive Bruschetta

Freshly ground pepper, to taste

Preparation

Cook orzo in boiling salted water until al dente. Drain and set out on a cookie sheet to dry.

To the cooked orzo add feta and Bruschetta. Mix well. Add pepper to taste.

Notes:
Can add spinach or other greens for color.
Can add toasted walnuts or pine nuts.
