Sautéed Tofu with Asian Peanut Sauce

Ingredients
1 14 ounce package firm tofu
Sable & Rosenfeld Asian Peanut Sauce
Fresh spinach leaves
1/2 cucumber, cut in long thin strips

Preparation
1. Drain tofu, pressing gently between paper towels.
2. Cut tofu into bite-sized cubes.
3. Place tofu in bowl; pour over enough Asian Peanut Sauce to cover.4. Cover and marinate in refrigerator at least one hour (up to four hours; the longer the spicier.)
5. Heat small sauté pan to medium.
6. Sauté tofu in marinade for about 10 minutes, stirring constantly.
7. Serve over fresh spinach and cucumber strips. Enjoy!
